CRYSTALLIZATION

Why does honey get hard/crystallize? When honey crystallizes this means that the water in honey contains more sugar than it should naturally hold. The overabundance of sugar makes honey unstable. Thus, it is natural for honey to crystallize since it is an over-saturated sugar solution.

 

To liquify your honey, place your jar in hot water without the lid until there's no more "sugar". 

IS IT SAFE TO EAT? 

Yes! Some people prefer it crystallized honey just natures way of letting you know it is doing its job.
